We source this special pepper from a micro-climate in southern Cambodia. Unlike the black Kampot pepper which is dried when green, this pepper is dried when red or fully ripe. This result in an incredibly sweet, chocolatey pepper flavor that is perfect as a finishing pepper, or for desserts or creamy dishes.
