Mastic is the dried resin or gum from the Mastic tree, grown in Chios, Greece. It has a fresh, piney, forest-y flavor that pairs well with cinnamon, vanilla, lemon and herbs. Traditionally used in Greek confections and liqueurs, we also love using mastic in fish and vegetable dishes. Best ground to a powder in a small mortar.
