It is shelf stable, and the addition of a small amount of cider vinegar thins the consistency - it pours like maple syrup (not like honey). Use in salad dressings, mixed drinks (makes a fantastic hot toddy!), over vanilla ice cream, or with seltzer and lime for a homemade spritzer!
