Excited to start using spices in your cooking but feel uncertain about how to get started? Do you want to feel at ease using spices intuitively in everyday cooking? We’ve designed our new Flavor 201 class series just for you!
Each class in this series will build on the foundations laid in our popular Spice 101 classes* and help to boost your kitchen confidence so you can start using the spices in your cupboard to their full potential.
In this first class, you’ll learn about SOUR flavors — why they’re crucial to balancing flavor in a dish, which spices exhibit sourness and how to use them, and how just a hint of sourness can awaken our perception of other flavors.
We’ll start with an overview of your sour-spice toolkit — the spices you can look to for punching up flavor. Then, we’ll explore a few sour powerhouses — with a lesson on sumac, the popular Turkish spice, and how it enlivens rich dishes such as Brown-Butter Lamb with Squash & Pasta. We’ll explore the citrusy notes of some spices and Claire will demonstrate making Coriander Encrusted Tofu with Makrut Lime Oil. And, lastly, she’ll will show you how to make your own chaat masala, a popular Indian spice mix that features green mango and is fun to use in dressings, on roasted veggies or grilled fruit, and even on popcorn.
