Join our friend and collaborator Suman Shah of Fork on a Road to learn all about dal, the cozy and hearty lentil soup served at almost every Indian table, and one you’ll soon want on your table on regular rotation.

If you’ve been eager to explore Indian flavors in your own kitchen but haven’t known where to start, this is the class for you.

Suman will give us a regional overview of dal styles. She’ll share techniques for layering flavors, including how to temper spices in oils (also known as tarka or chhonk) as a method to build rich flavor in this humble dish. She’ll also teach you her fool-proof technique for making perfect, toothsome, rice. Every time.

Suman will demonstrate making a regional Gujarati dal served with delicately spiced rice and will also introduce you to two other dals (and the best tempering oils to use with them). Plus, you’ll get her recipe for the creamiest payasam ever, a classic spiced pudding that can be made from left-over cooked rice.

After the class, we’ll send you all the recipes, a quick guide to building your Indian spice pantry, and a list of Indian cookbooks that Suman recommends. You’ll also get with a sample of our Comfort Curry blend.

Suman’s recipes draw inspiration from her Indian roots and a life of almost twenty years in New England. When not hosting cooking classes, she’s busy developing her Market Day Meal Kits for local farmers markets. Suman shares cooking explorations on her blog Fork on a Road, drawing inspiration from different corners of the world.
